Fowes Vegetable Stir-Fry

10 sticks of Asparagus ($3.99/1b), 4 purple Radish ($1.49/bunch), 6 Sweet mini-peppers (2 red, 2 yellow, 2 orange. $1.99/bag), 2 medium diced Tomatoes ($1.00), 10 sticks of Fresh organic Parsley ($1.59/bunch), 1 tablespoon of Olive Oil, 2 cubes of knorr cilantro seasoning ($1.89/box of 20 counts).
- Diced tomatoes, asparagus, radish, mini peppers and toss together in a bowl, set aside.
- Pour olive oil inside frying pan and place on low – medium heat for 2 minutes. Add vegetable bowl and stir for 5 minutes.
- stir fry is ready!
Serving: I love this stir fry because it can serve up to four different meals or more and you can store it in the fridge or freezer for up to a week (or longer in the freezer) without it loosing its fresh taste.
- Add Tofu and served as a stir fry dish.
- Can be served with Boiled rice (Boil rice for 15 – 20minutes and after wash on medium to high heat).
