#4. Fowes Vegetable Stir-Fry



Budget: $15.00 at Harris Teeter

10 sticks of Asparagus ($3.99/1b), 4 purple Radish ($1.49/bunch), 6 Sweet mini-peppers (2 red, 2 yellow, 2 orange. $1.99/bag), 2 medium diced Tomatoes ($1.00), 10 sticks of Fresh organic Parsley ($1.59/bunch), 1 tablespoon of Olive Oil, 2 cubes of knorr cilantro seasoning ($1.89/box of 20 counts).


  1. Diced tomatoes, asparagus, radish, mini peppers and toss together in a bowl, set aside.
  2. Pour olive oil into frying pan and place on low – medium heat for 2 minutes. Add vegetable bowl and stir for 5 minutes.
  3. stir fry is ready!

Serving:  I love this stir fry because it can serve up to four different meals or more and you can store it in the fridge or freezer for up to a week (or longer in the freezer) without it loosing it’s fresh taste.

  1. Add Tofu and served as a stir fry dish.
  2. Can be served with boiled rice (Wash rice three times or until water is clear, then boil rice for 15 – 20minutes on medium to high heat).


3.Can be served with fried/boiled plantain (Peel Plantain and Boil for 15 minutes on medium to high heat).


4. Can be served with Sweet or Regular potatoes.

5. Grab a wrap or toast bread and make it a sandwich or wrap!

2 Spinach wrap (6 ct for $4.29), 1 small radish($1.49/bunch), 2 sweet mini peppers (1 red, 1 orange, $1.99/bag), 5 sticks of asparagus ( $3.99/ Ib), 1 teaspoon of olive oil, 1 cube knorr cilantro seasoning ($1.89/box (20 counts)), 3 sticks of green onions ($0.79/bunch) 1 or 1/2 medium fried plantain (50 cent)


Toss ingredients together in olive oil for 5-10 minutes and it’s a wrap!


Can be served with cabbage as a cabbage wrap or with Vietnamese rice paper as a wrap.

#2 Ramen vegetable Soup


Budget : $10

Chances are, you will already have most of these ingredients in your pantry.


1 Oriental ramen Noodles (25 cents), 3 counts of sweet mini peppers ($1.99 – 3.28), 1 cup of spinach ($2.58 10 oz bag), 1 tablespoon of curry, A pinch of cumin, 1 teaspoon of thyme, 1/2 medium onion, 2 cubes of cilantro seasoning.


  • Boil Ramen Noodles in medium heat for 5 minutes.
  • Add diced sweet mini peppers, onions, spinach, curry, thyme, and chopped onions.
  • Boil for an additional 5 minutes, then add cilantro seasonings.
  • Reduce heat to low and allow soup to cook for an additional 2 – 3 minutes.
